How To Make Healthy Raw Food Chocolate Torte

Delicious and wholesome? Yes, you can have it all! With this amazing chocolate torte, you can prepare a mouth-watering dessert that leaves the guilt behind.

Ingredients 2 cups Almonds 1/2 - 3/4 cup Cocoa or Carob Powder 1/2 cup Sweetener (Maple Syrup, Raw Honey, Rice Syrup, Barley Syrup or Dates) 2/3 cup Nut Butter (Peanut, Cashew, Almond, Tahini) 1 tsp. Vanilla extract Topping (Optional: Fruit, Nuts, Coconut, etc.) Spring Form Pan or pie plate

1. Soak two cups of almonds overnight and let them drain for 8 hours. Once a dormant (dry) seed soaks up water it comes to life and it is that life that makes soaked raw nuts, so nutritious.

2. Place the almonds and remaining ingredients in a food processor.

3. Spread the ingredients in a 4-inch diameter Spring-Form pan or pie plate or 8X8 baking dish (or roll into small balls).

4. Freeze for at least 4 hours.

5. Gently remove when frozen.

6. Decorate it any way you wish Fruit, fine coconut flakes, and slivered almonds are great!

7. Slice as you would a cheesecake.

One more thing I have done with this torte is upon removing it from the spring form I have cut it into two layers using a very big knife. Then I spread fruit juice sweetened raspberry jam inside and replaced the top layer. It was wonderful.

If you are into dairy, you could also spread cream cheese, sweetened with dates, maple syrup, jam, or just plain. I haven’t tried it, but I think it would be incredible. The important thing to remember is that this recipe is very forgiving, and will take almost infinite variation. Let us know what you try. Even the "flops" taste good! Recipe adapted from
